Ingredients

  • 3 tbsp freshly-squeezed lemon juice
  • cup avocado oil
  • 1 tsp dried oregano
  • 3 cloves fresh garlic pressed
  • 2 pinches smoked sea salt
  • 1 large pinch white granulated sugar
  • ½ tsp homemade smoky seasoned salt
  • 16 lemon wedges
  • 1 lb medium pre-cooked white cocktail shrimp 26/30 per lb; thawed

Instructions

  • Soak the wooden skewers in water for 15-20 minutes so they do not catch fire while on the grill.
  • In a small bowl, whisk together the fresh lemon juice, avocado oil, oregano, pressed garlic, smoked sea salt, sugar, and seasoned salt. Set aside.

  • Assemble your shrimp skewers. Use the sharp end of your wooden skewer to add a lemon wedge, followed by three to four shrimp, and then another lemon wedge to each skewer. Place the skewers in a large baking dish.

  • Drizzle the lemon marinade over the shrimp. Allow the shrimp to sit for 15-20 minutes before grilling.
  • Grill the shrimp for 60 seconds per side, no longer. Remember, these shrimp are already fully cooked. You're just looking to heat the shrimp, char them a bit, and infuse some smoky grilled flavor into them.
  • Serve the shrimp skewers right away! Store any leftovers in an airtight bag or container in the fridge.
