In a large microwave-safe bowl, microwave the peanut butter and honey for 20-30 seconds.
1 cup creamy peanut butter, ½ cup honey
Stir together the warmed peanut butter and honey until well combined. Add the oats and mix until the oats are coated in the peanut butter and honey mixture.
3 cups rolled oats
Grease a 9 x 9 pan. Spread the oat mixture across the bottom of the pan, firmly patting it down into an even layer using your hands or a small spatula. Sprinkle the mini chocolate chips across the top of the bars and lightly press them into the oat mixture.
¼ cup mini semi-sweet chocolate chips
Refrigerate for at least an hour to allow the oat bars to set, then cut into squares and enjoy! I also store these bars in the fridge as they become a bit soft if left at room temperature.
