Instructions
Peanut Butter Oat Bars
Preheat your oven to 350°F.
Using a spatula or spoon, mix together the flour, oats, melted butter, peanut butter, white sugar, brown sugar, vanilla extract, eggs, and salt in a medium mixing bowl until well incorporated.
1 cup salted butter, 1 cup creamy peanut butter, 1 cup granulated white sugar, 1 cup light brown sugar, 1 tsp salt, 1 tbsp vanilla extract, 2 large eggs, 2 cups all-purpose flour, 1½ cups old fashioned oats
Pat the oat bar mixture into a 9x13-inch pan sprayed with cooking spray and lined with parchment paper.
Bake the bars for 18-20 minutes at 350°F, or until lightly browned around the edges. Let the bars cool completely. When they are almost completely cool, prep the peanut butter and chocolate swirl topping.
Peanut Butter and Chocolate Swirl Topping
Microwave 1 cup of creamy peanut butter in 20-30 second intervals, stirring in between intervals, until warm and pourable. Set aside while preparing the chocolate swirl portion of the topping.

Microwave the chocolate chips and other 1/4 cup of peanut butter together in a separate bowl in 20-30 second intervals, stirring in between intervals, until smooth and pourable.
¾ cup semi-sweet chocolate chips, ¼ cup creamy peanut butter
Once the oat bars are completely cool, pour the warmed peanut butter that you had set aside over the bars. Immediately dollop the chocolate/peanut butter mixture on top of the peanut butter. Gently swirl the two mixtures to create a marbled top with a butter knife or kitchen skewer.
Refrigerate the bars for 1-2 hours to set the topping before cutting into the bars. Then, slice into bars and enjoy!

Note 1. Salt: I use salted butter in this recipe. If you use unsalted butter, I would add 1 1/2 teaspoons of salt to the oat bars instead of only 1 teaspoon.
