Preheat your oven to 400°F.
Cut off the top quarter of each head of garlic. Place the two heads of garlic in a piece of tin foil with the side you cut facing upward, as seen below.
Drizzle about ½ tsp of avocado oil (or olive oil) over the top of each head of garlic, or enough to coat the exposed garlic cloves. Then, sprinkle a pinch of salt on each.
Roast the garlic for 45 minutes to 1 hour, or until the cloves are golden and soft.
Squeeze the cloves out of the head of garlic and add to any recipe for soup, sauce, garlic bread, etc. Alternatively, squeeze the cloves out of the garlic head and store them in an airtight container in the fridge.
