Preheat your oven to 340°F.
In the bowl of a stand mixer, cream your softened salted butter, white sugar, and light brown sugar together. Add eggs one at a time and mix until well incorporated.
1 cup salted butter, 1½ cups white granulated sugar, ½ cup light brown sugar, 4 eggs
Add vanilla extract, sour cream, and cinnamon applesauce and mix on medium speed until completely combined.
2 cups sour cream, plus 1 heaping tbsp, 2 tsp vanilla extract, 2 cups sweetened cinnamon applesauce
In a separate mixing bowl, whisk together the flour, baking soda, cinnamon, and salt.
4 cups flour, 2 tsp baking soda, 1 tsp ground cinnamon, ½ tsp salt
Add the dry ingredients to the wet ingredients about 1/2 – 1 cup at a time, mixing on low speed until well combined.
Place your 6 small loaf pans on a large sheet pan. Spray the loaf pans with baking spray of your choice (See Note 3 below). Pour equal amounts of your batter into each pan- they should be about 2/3 full. Lightly sprinkle the extra white granulated sugar across the top of each loaf before baking to create a bit of a sugary crust on top.

Bake the applesauce bread at 340°F for 40 minutes, turning the pan at the 20-minute mark to ensure all loaves bake evenly. Check with a toothpick to ensure the middles of the loaves are baked through. Then allow to cool in the pans for 10-15 minutes before removing the loaves and placing them on a cooling rack. Meanwhile… make your maple glaze to drizzle on top of the bread.
