Shred and roughly chop the imitation crab into pieces. I like a mix of smaller and larger pieces. Mince ½ cup of celery (including the leaves for flavor!). After removing any tough outer layers and dry tops, thinly slice the green onions.
1 lb imitation crab legs, ½ cup minced celery hearts, 2-4 medium green onions
In a medium bowl, stir together the crab, celery, green onion, and mayonnaise.
¾ cup mayonnaise
Add salt and pepper to taste, if you'd like.
