10-Minute Cheater Mexican Rice

​This quick and easy Mexican rice recipe uses pre-cooked rice to deliver a flavor-packed side dish in just 10 minutes. Add it to burritos or serve it alongside tacos or any of your other favorite Mexican dishes.

Ingredients

  • 2 tbsp salted butter
  • cup small diced sweet onion
  • 1 tbsp tomato paste
  • ¾ cup water
  • 1 tbsp plus 1 tsp taco seasoning
  • ½ tsp chipotles in adobo
  • 1 heaping tbsp salsa or pico de gallo
  • 1 bag Ben's Original Ready Rice (8.5-8.8 oz, depending on variety) long-grain white, jasmine, or basmati will all work—your choice!
  • 7-8 oz black beans drained and rinsed; optional
  • Shredded Mexican blend cheese to taste; optional
  • Other mix-ins or toppings of choice, such as crumbled queso fresco, extra salsa, kidney beans, green chiles, fresh and/or pickled jalapeños

Instructions

  • Melt the butter in a medium skillet over medium heat. Add the small diced sweet onion and stir until coated in butter. Sauté for 3-4 minutes.

  • Add the tomato paste and stir. Then, add the water, taco seasoning, chipotles in adobo, and salsa/pico de gallo. Stir until all ingredients are well combined. Cook over medium heat for another 3-4 minutes, stirring occasionally.

  • While this mixture is cooking, prep the rice. Heat the Ben's Original Ready Rice in the microwave according to package instructions—the cook time is typically 90 seconds per 8.8 oz packet.

  • Add the rice to the pan and stir until coated with the seasoned salsa mixture. If the rice seems dry, add an extra splash of water.
  • Optional: Stir in some black beans and a bit more water. Sprinkle some shredded cheese on top of the rice and place the lid on the skillet to let the cheese melt.

  • Add any other toppings you'd like (such as extra salsa, crumbled queso fresco, or cilantro). Serve this quick Mexican rice with tacos, taco salad, or your other favorite Mexican dishes. Store any leftovers in an airtight container in the fridge.
