Avocado toast is one of those dishes you see on your Instagram feed all the time—but not exactly everywhere in real life, at least not where I live! So I started making my own, and this Mediterranean-inspired version quickly became a favorite. It’s layered with roasted red peppers, grilled artichokes, crumbled feta, and a pinch of smoked salt—all piled onto a slice of homemade no-knead bread. It’s flavorful, packed with nutrients, and just the best!
Mediterranean Avocado Toast Ingredients
1. Bread: I love using a slice of homemade no-knead bread or sourdough for this avocado toast. You can use whole wheat bread instead if you want to make this already healthy breakfast even healthier.
2. Avocado: Of course! You’ll need about half a perfectly ripe medium avocado for one piece of this toast.
3. Roasted Red Peppers: I LOVE red peppers, so I add a generous amount onto each slice of this toast. My favorite roasted peppers are from the Greek brand Uncle Yiannis, but they can be hard to find—here’s another more accessible option from Amazon.
4. Artichokes: I love the grilled flavor of the artichokes from World Gourmet, but (again) these were kind of a one-off find. These Mantova Grilled Artichokes are another option that can be found on Amazon!
5. Feta: The salty flavor and crumbly texture of feta go perfectly on this toast. My favorite feta varieties for this recipe are Mediterranean herb and garlic and herb—but you can never go wrong with plain feta!
6. Smoked Salt: This smoked salt from Gustus Vitae is so delicious, especially on this toast. You just need a pinch or two, since the feta is salty as well.
How To Make Mediterranean Avocado Toast
- Toast your bread.
- Add about half a ripe avocado and mash it with a fork.
- Layer on the diced roasted red peppers, diced artichoke, and feta cheese. Top the toast off with a sprinkle or two of smoked sea salt.
- Enjoy! Not to state the obvious, but this avocado toast is best eaten right away.

- 2-3 tbsp medium-diced roasted red peppers
- 1-2 tbsp roughly chopped artichoke hearts
- Crumbled feta cheese to taste
